I would add a coffee maker and/or hot plate.
I would NEVER allow Alexa to control my disposal for the reasons you stated!
I use a switch that requires 5 up paddle taps to start the disposal and it only runs for 10 seconds.
A single down paddle tap turns it off before the timeout.
The switch is a Zooz wireless switch and is right above my sink faucet so easy reach.
Apologies if this angle has already been covered.... (I haven't read the whole topic....) If you have a Hue bridge could you not accommodate the over-use of 3-way switches (somewhat) by using smart bulbs, removing the need for the switches? Or was it that you connected an old bridge you already had an only mentioned it as a matter of course?
I have Zooz ZEN04 plugs attached to several heaters and a manual espresso maker. Not for remote control, only as timers to turn them off in 30 minutes!
Indeed the Hue Bridge was an old one I had, with a few bulbs, which I generally only use as a last resort. But even so, they would not really work in the 3 way applications (e.g. stairs) where I do want the wall switches to work correctly when used manually (in addition to having automation capabilities and Alexa control). Or am I missing something obvious?
Not that I can easily spot... But I have not faced this contention in a big way myself, I leant pretty heavily into the Hue ecosystem early on, so have not really delved into fixed smart light switches since.... Others here are more likely to be able to offer more insight on this one, was just raising it in case you had not considered it.
