Has anyone researched how this works? I just got a wall oven that has it. They have an app where you can control the appliances and see status on them. But, that app requires you to sign up for an account, which makes me think it's all cloud based. The oven also apparently has bluetooth on it, but I haven't messed with it.
Yes they are cloud based, you can use IFTTT to connect them to Hubitat virtual switches
I don't know anything about the ovens, but I have my washer and dryer set up throught IFTTT to talk to Hubitat. I can start them and they "announce" when the load is done via TTS.
I wonder if there's a way to setup a virtual devices to read values about the GE wifi appliance (internal temp, probe temp, etc)

No. Probably won't either. Thinking about it... I can't really think of a good reason to integrate it. The oven will apparently already shut itself off after like 12 hours. And the temp probe, it's not accurate anyway. It's off by up to 20 degrees as compared with a Thermopop and a Meater+.
It's probably spying on me also, and the government is probably sending mind control chemicals over the internet which the oven puts in my food.
In all seriousness though, I think it's pretty gimmicky. If I'm cooking something, I'm almost always in the kitchen or nearby.

I think everything that can be added to and used within Hubitat is a good thing and moves Hubitat up the food chain in the Smart hub Home Automation market. to me the idea of delayed baking; (Im fishing and might be back 3 hours later than I thought but I have a frozen meal in the oven that is now thawed but otherwise fine. I adjust my baking based on my return time and voila, meal hot and ready. Or how about an Oven Scene whereby you setup a "Bake then Broil" scenario or a "Convection Bake at LOW temp then a Broil" That then totally would open up the use of the device far past what GE gives you out of the box. Can you say WINNING or do you prefer whining? ohhhhhhh and since it is a Double Oven the accompanying bread item or casserole can have its own cooking scenario and be also ready with the other ovens items. DOUBBBBLY WINNING.......yah

You connect your appliance to IFTTT
You create a virtual switch in Hubitat for use with the appliance
You connect Hubitat to IFTTT
Then you create an applet in IFTTT for what to do when the Hubitat Virtual swtich turns on/off.
