Wanting to go ahead and replace the light switches with dumb ones. If I just disable the device and not remove it from any apps, etc. will that cause errors?

No, it will just stop the driver code from running on the hub, so apps won't "see" events and whatnot. It doesn't actually affect the device or your Z-Wave/Zigbee/etc. network itself, so whether that will be happy if you start physically removing devices (as it sounds like you're also doing) is another story. But when you're moving, it might be the best, or at least easiest, option.
If you start shutting down mains powered nodes that's gonna cause problems for stuff trying to route through them I would think...
Curious, are you physically moving to a new location? If this is the case I expect your Z-Wave mesh to be totally different in your new location. And the old(current) mesh will be severely messed up as you disable devices.
Others should comment on this as its my initial opinion:
To save the Apps you might consider adding virtual devices to them just as place holders. Then Exclude each device as you shut it down.
Why? I think at the new location you can build a better Z-Wave mesh by adding devices in a Z-Wave aware sequence.
Sorry for the late response, been way toooo busy. Thanks for all the suggestions. I decided to unpair all the Z-wave devices as I remove them. At this point I don't know the layout of our new house as we haven't found it yet....
One problem I ran into, several of the Zooz switches would not unpair for some reason. I finally force removed them and figured I'd do a factory reset when I got ready to use them again.
