If I migrate from C-5 to C-8, will I have to rejoin my Zigbee or Z-Wave devices? Is one or the other (Zigbee or Z-wave) more likely to have issues with the C-8? Will my Lutron Caseta integration automatically migrate?
Your C-5 offers a Cloud Migration for Migration for free:
Settings: Backup and Restore.
This is a One Time backup in the sense that you can click it as many times as you want but there's only one backup saved, you'll overwrite the previous with each click. This differs from Hub Protect, which offers a history of backups along with automated cloud backups.
That specific Migration backup is what is needed to avoid having to rejoin Z-Devices. You make the Migration backup on the C-5, power it down, then on your C-8, restore the cloud backup.

Does that work the other direction too? I have a C-7 as my home hub and a C-5 in my travel trailer. Just wondering if the C-7 craps out for some reason can I restore a backup to the c-5?
No.
The chips used on Hubitat Hubs prior to the C-8 were't writable (in the migration sense) and that's why the feature is specifically named "...for C-8 migration"
