Best way to move from Smartthings to Hubitat

Zigbee and ZWave are far apart on this process. ZWave is called "Join" (Include/Exclude) while Zigbee uses "pair" -- not that the words matter, just there's a large enough difference that Engineers pick different words.

Zigbee gets put into pairing mode and tells the controller its unique number that was assigned back in the factory. No exclude for Zigbee, because there's nothing that changes on a Zigbee device, therefore, nothing that needs erasing, and then overwriting. The Hub has it's own unique number, burned in at the factory. Pairing is largely a "swap" of the numbers. The Device remembers the Hub's number, the Hub remembers the device's number.

ZWave has no factory number. The Hub must tell it the Home Network number AND the specific number on the network. "Exclude" is (from the device's viewpoint" a command to erase itself.

ok, thanks for the explanation, so it means that once I put a device in pairing mode and find it in hubitat it will automatically be added/paired to hubitat and forgotten in Smartthings right ?? or can a Zigbee device be connected to 2 hubs at the same time ?

Yes

No.
