I've been trying to get echo speak working on my nephews hub in FL (Im in MN).
When I look at his logs there is 3 separate Echo Speaks
There is only 1 app
and the app "appears" happy
Note this is RIGHT after rebooting the hub
Any suggestions?

You’re seeing the logs of previous installations of the app along with the current. Logs don’t go away when the app is uninstalled.
